Roasted Chicken with
Poultry Rub
NO OTHER SPICES NEEDED!
Ingredients:
1 Baking Chicken
1/3 package of Poultry Dry Rub
4
tablespoons or 1/4 cup of Butter
Directions:
Put Dry Rub in a small bowl and mix well.
Wash / rinse the
chicken, separate the skin lightly from the meet but keep intact.
Put the
butter in microwave or in a sauce pan and melt but do not boil!
Mix about
1/3 of the dry rub mix with the melted butter. Rub the mixture under the skin
(between the meet and skin ), and then over the skin generously!
Place
in a baking pan and cover with aluminum foil. Time and temp is according to the
size of the chicken, usually it is (375F for 1 1/2hrs is good for a 4 lb.
chicken).
When chicken is almost done, remove the aluminum foil (drain the
dripping and save for gravy or sauce) place back in the oven let it golden for
about 15 to 20 min. Remove from oven and let the chicken rest for about 7 to 10
min. Carve and serve!
